veg biryani is a flavorful, fragrant, colorful & healthy layered rice dish here are the ingredients we need. all ingredients & quantities are listed in the description box do not get overwhelmed by the number of ingredients needed. this dish is not difficult to prepare there are 3 steps to making this veg biryani – boiling the rice, cooking the vegetables & layering the rice & veggies oil basmati rice. it has been soaked for 30 minutes & the water drained out just before preparing stringed & chopped french beans cauliflower broken into small florets green peas peeled & chopped carrot deseeded & cubed bell pepper caramelized onions sliced onion chopped tomato ginger garlic paste chopped cilantro mint leaves saffron strands soaked in hot milk whole spices – bay leaf, black cardamom, green cardamom, cinnamon, peppercorns, cumin seeds & cloves 2 sets of whole spices – one for the rice & the other for the veggies garam masala salt red chilli powder turmeric powder yogurt and water we have already poured the water in the wok & kept ready Step 1 – Boiling the Rice we need to half boil the rice. we will take it off the heat when it is about 50% cooked keep heat on medium & let the water come to a rolling boil now reduce the heat to low and add the rice, one bowl of whole spices, salt & a tbsp of oil. the oil will keep the rice grains separate stir well and cover with a lid check a few times in between after 5 minutes our rice is half cooked put off the heat & transfer it to a colander and let the water drain out Step 2 – Cooking the Vegetables while the rice water drains out we will cook the vegetables keep wok on medium heat. add oil & let it heat up then add the other bowl containing the whole spices and reduce heat to low saute the spices for a minute now add the sliced onion & saute till it turns light pink & translucent, about 1-2 minutes. raise heat to medium the vegetables also will be cooked about 50% only as they will also get cooked with the rice later onions are done add the ginger garlic paste & saute for a minute add the chopped tomatoes. stir & add the spices salt turmeric powder red chilli powder garam masala keep heat on low & stir well add the french beans and cauliflower and stir cook them for about 2 minutes. heat is on low now add the bell pepper, carrot & green peas mix well and stir cook for a minute add the yogurt mix well cover & cook for 2 -3 minutes after 3-4 minutes our veggies are half cooked. put off the heat Step 3 – Layering the Rice spread half the rice over the veggies sprinkle half the soaked saffron milk spread some carmelized onions mint leaves & some cilantro spread the rest of the rice now and sprinkle the remaining saffron milk cover with a lid. put on the flame and keep it low. cook for about 10 minutes after 11-12 minutes our rice is cooked completely and the veg biryani is ready put off the heat & cover it again. let the biryani sit for 4-5 minutes before you transfer it after 4-5 minutes our biryani looks good, transfer it to a serving bowl as shown there is very nice aroma of the spices floating all around and it looks delicious & colorful have it with plain yogurt to enjoy the variety of flavors to the fullest do prepare it our way & share your experience if you like the recipe & dish please share our video, subscribe to our channel & press the bell icon to get notified of our latest upload. thanks for watching
