Hi!!Namaskar!!What’s up?? Hope all are doing good.I’m also fine here Today I’m going to make a lunch box item,Vegetable Roll Many people asked me to do a video on this It’s school re-opening time.So I thought not to get delayed anymore It’s every mother’s duty to fill the lunch box with variety dishes everyday for their loving children It’s a very common dish not a complicated one Those who haven’t tried it,make a try Till where has your cooking challenge reached?? I know many subscribers are going well with the challenge I asked,because i just want to give you some inspiration.Nothing else So let’s start making vegetable roll First of all,prepare the dough Take 1tbs of oil(your choice) in a vessel Add salt to taste Make the dough in the same way you knead for chapathi Add 1/2 glass of water and mix well Add 1/2 glass Maida and 1/2 glass of Atta Mix them well and knead into a soft dough It’s always easy to knead when you add flour to the water Water content is more in this dough,so i’m adding 1 tbs of Atta again Add Atta proportionate to the water taken.The amount of water required to knead Atta varies in each brand We should get a soft dough at the end It’s a soft dough now.Close it and keep it aside for 30 minutes To prepare the masala,take a kadai and pour some oil and heat it in a medium flame You can use any oil you prefer. If you want you can splutter some mustard seeds in it.But I’m not doing it. It’s medium hot now,add 1 finely chopped onion and 1tsp on crushed ginger Add 3 finely chopped green chilly Mix well Stir till the onion becomes transparent .No need to make it into a brown shade Add enough salt Saute till it becomes transparent It’s a very simple filling It’s not necessary to add the masala,that i’m adding.Its all upto your taste preferences Add 1/4 tsp turmeric powder and mix well I’m doing this video for those who have asked me to do a lunch box item Aloo parotta is also one of the lunch box item I used to give to my kids Add 1/4 tsp of kashmiri chilli powder( optional) It gives a nice colour to the masala Its strictly optional Saute well till the raw smell goes Then add 1/2tsp of garam masala and stir well Instead of tomato,we’re adding lemon juice in this masala Saute well til the raw smell of the masala goes Maintain the heat in medium Its almost done now.Add chopped carrot to the masala,which makes the masala more healthy for the kids You can add cabbage if you want Add one handful of green peas You can add whatever vegetables you prefer.For example,beans,cauli flower etc Close it with a lid and cook in medium flame for some time It’s done now.Don’t cook for long time Add 2 medium sized boiled potatoes Mix it well with the masala Mixed well now add coriander leaves or curry leaves based on your choice Adding finely chopped coriander leaves Excess water content should not be there in the masala,so make it dry enough Add 1 tsp of lemon juice and mix well Let me check the taste.Its perfect for me Check the taste and make adjustments if required Let it cool for some time Its 30 minutes now. Make small balls from it and roll it into a chapati If you don’t want maida,you can take 1 glass full Atta.If you add maida,it gives you a different taste Maida is not compulsory in this dish.You can easily replace maida with 1 cup of atta These are all usual items.Eventhough I’m sharing this only for the people,those who don’t have an idea about lunch box items It spreads more when you roll because of adding maida.So that,you can make a big chapathi Don’t bother about the shape Don’t make it too thin.because we need to fill this chapathi wih the masala Roll the remaining dough balls and cook it all together.Otherwise it takes a lot of time Just to show you,I’ve made 4 chapathi here.Now let’s cook it in a pan Cook the all chapathi in a hot tawa Maintain the heat in medium.Flip it after 10 seconds (when the colour starts to change into brown) No need to puff it up like chapathi.Because we will fry this after filling This is enough You can add your favorite items in the filling. You can avoid garam masala or you can add cumin powder You can replace coriander leaves with curry leaves Make changes with your preferences If you want,you can reduce the quantity of potato and increase the quantity of other ingredients I keep on changing the filling ingredients,so that my kids won’t get bored with the veg roll Sometimes I used to add more carrots.Sometimes I used to add capsicums like that…. I’ve made a paste with 1tbs of maida by adding some water,to use as a gum You can make this with Atta also Use the filling only after it cools down Usually I prepare the filling in the night and after cooling,keep it in the Fridge Next day morning,I only make chapathi and roll it with the filling I’ve already made and fry it Decide the amount of filling per chapathi based on your likes I’m placing it lengthwise.Every mother knows how much to fill in a chapathi for their kids Here I’ve added 1tbs plus masala and its enough Now fold it carefully like this Rub the maida mix at the end and fix it well to the roll So that the filling won’t come out Press it well In the same way rub the maida mix on the other sides also Fold it well.Or else,the filling will comes out while frying It would be difficult if you cook the chapathi after filling the masala Its always better to cook 3/4 of the chapathi first,then fill it with masala,then frying. 1st roll is ready now The green peas that I used here was Frozen green peas.You can use fresh green peas also. If you are using dry green peas,boil them separately after soaking,then add into the masala 4 rolls are ready with the the filling.Now let’s fry them You can either deep fry or shallow fry the rolls Here i’m going to shallow fry the rolls with minimum oil 3/4th of the chapathi is already done,So,when you flip them for some time,it would be ready So don’t want to waste more oil by deep frying It’s hot enough.Maintain the heat in medium flame Now fry the rolls in the oil A color change should be there on both the sides.And that’s enough If you see a golden shade on both sides,take it out from the oil Its a very simple recipe Wipe them well with a kitchen tissue or keep it on the top of a tissue paper It won’t absorb oil,so tissue is not necessary Fry the remaining rolls in the same way You can keep this roll in the freezer, after filling also If you keep it in the freezer like that,you can fry them in the morning just before the kids leave to school Do it according to your convenience I always make the filling in the night,and make fresh chapathi in the morning only Keeping the rolls in the freezer after filling would be easy for working women Thus both the kids and mothers become happy This is also ready You can store the balance filling in the fridge and use it whenever you want to make the roll So,the tasty,healthy and crispy (its soft inside) vegetable roll is ready After cooling,I’ve made it into half Now,let me taste it with some tomato sauce It tastes really good Actually,it’s a good filling. If you give 2-3 rolls to your kids,they won’t feel hungry for long time Because it includes potato carrot etc You are free to add vegetables of your taste Make adjustments in the masala if you prefer Its very simple as well as tasty Don’t forget to make a try and give it your kids Let me have one roll now.The remaining rolls are for my kids See you all with a new recipe.
